Cut the chicken breasts into bite-sized pieces, about 1-inch cubes.
In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the chicken pieces and cook until they are browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
