  • 4 pieces Chicken thighs (bone-in, skin-on)

  • 1 large Yellow onion (finely chopped)
  • 4 cloves Garlic (minced)
  • 8 ounces Mushrooms (sliced)
  • 1 cup White wine
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 1 tablespoon Dijon mustard
  • 2 sprigs Fresh thyme
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Season both sides of the chicken thighs with salt and pepper.

Step 2

In a large skillet, heat olive oil over medium-high heat. Place the chicken thighs skin-side down and sear until the skin is golden brown, about 5-6 minutes. Flip and cook for another 2-3 minutes on the other side. Remove the chicken from the skillet and set aside.

Reduce the heat to medium and add the butter to the skillet. Once melted, add the onions and cook until softened, about 3-4 minutes.
