Ingredients

  • 4 cups All-purpose flour
  • 0.5 cup Cornmeal
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Salt
  • 2.25 teaspoons Active dry yeast
  • 1.25 cups Warm water (110°F/43°C)
  • 0.25 cup Olive oil
  • 8 cups Fresh spinach
  • 1.5 cups Ricotta cheese
  • 2 cups Shredded mozzarella cheese
  • 0.5 cup Parmesan cheese
  • 1 large Egg
  • 1 teaspoon Garlic powder
  • 28 ounces Crushed tomatoes (canned, unsalted)
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.25 teaspoon Crushed red pepper flakes
  • 2 tablespoons Butter (for greasing)

Directions

Step 1

In a large mixing bowl, combine all-purpose flour, cornmeal, sugar, salt, and yeast. Gradually add warm water and olive oil while mixing to form a dough.

Step 2

Knead the dough on a floured surface for 8-10 minutes, or until smooth and elastic. Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

Step 3

While the dough rises, prepare the filling by sautéing spinach in a dry skillet over medium heat until wilted. Transfer to a colander and press out excess moisture.

Step 4

In a medium bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, egg, garlic powder, and the cooked spinach. Mix until well blended and set aside.

Step 5

Preheat the oven to 425°F (220°C) and grease a 12-inch deep-dish pizza pan with butter.

Step 6

Punch down the risen dough and divide it into two pieces, one slightly larger than the other. Roll out the larger portion into a 14-inch circle and press it into the prepared pan, ensuring it extends up the sides of the pan.

Step 7

Spread the spinach and cheese mixture evenly over the base crust.

Step 8

Roll out the remaining dough into a 12-inch circle and place it over the filling. Pinch the edges together to seal, trimming excess dough if necessary.

Step 9

In a medium saucepan, combine crushed tomatoes, oregano, basil, and red pepper flakes. Simmer over medium heat for 10 minutes, then spread the sauce over the top pizza crust.

Step 10

Bake the stuffed pizza in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.

Step 11

Allow the pizza to cool for 5-10 minutes before slicing and serving. Enjoy!
