  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Crushed red pepper flakes (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh Italian parsley, chopped (optional for garnish)
  • 6 rolls Hoagie rolls (optional, for serving)

Directions

Step 1

Heat a large skillet or deep sauté pan over medium heat. Add 1 tablespoon of olive oil and brown the sausage links on all sides, about 5-7 minutes. Do not cook them all the way through—they will finish cooking later. Remove the sausages from the pan and set aside.

Step 2

In the same pan, add the remaining 2 tablespoons of olive oil and heat over medium heat. Add the sliced green, red, and yellow bell peppers, along with the onion. Sauté for about 7-10 minutes, or until the vegetables are tender and slightly caramelized.
