  • 3 lbs Beef chuck roast
  • 4 cloves Garlic cloves, minced
  • 4 cups Beef broth
  • 2 tbsp Dry Italian seasoning
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 tsp Dried thyme
  • 0.5 tsp Red pepper flakes
  • 1 tsp Black pepper
  • 1 tsp Salt
  • 2 tbsp Vegetable oil
  • 2 medium Green bell peppers, sliced
  • 6 Crusty Italian sandwich rolls
  • 1 cup Giardiniera (optional)

Directions

Step 1

Season the beef chuck roast on all sides with salt and black pepper.

Step 2

In a large Dutch oven or heavy-bottomed pot, heat the vegetable oil over medium-high heat.

Step 3

Sear the beef chuck roast on all sides until browned, about 4-5 minutes per side. Remove the beef and set aside.

Add the minced garlic to the pot and sauté for 1-2 minutes until fragrant.

Deglaze the pot by adding 1 cup of beef broth and scraping up any browned bits on the bottom.

Return the beef to the pot and add the remaining 3 cups of beef broth.
