Ingredients

  • 4 medium Roma tomatoes
  • 0.5 medium Red onion
  • 1 small Jalapeño
  • 0.25 cup Cilantro leaves

  • 1 large Lime
  • 2 tablespoons Chia seeds
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash all fresh produce under cool water and pat dry.

Step 2

Dice the Roma tomatoes into small, even-sized pieces and add them to a medium mixing bowl.

Step 3

Finely chop the red onion and jalapeño (remove the seeds for less heat if desired), and add them to the bowl.

Step 4

Roughly chop the cilantro leaves and mince the garlic, then stir them into the mix.
