Ingredients

  • 1 cup Cooked shrimp
  • 1 cup Imitation crab meat
  • 6 Flour tortillas
  • 4 ounces Cream cheese
  • 1.5 cups Shredded Monterey Jack cheese
  • 0.5 cup Sour cream
  • 1 4-ounce can Green chiles (diced)
  • 0.25 cup Heavy cream
  • 1 cup Enchilada sauce (white or green)
  • 2 tablespoons Fresh cilantro (optional, for garnish)

Directions

Step 1

In a mixing bowl, combine the cooked shrimp, imitation crab meat, cream cheese, 1 cup of shredded Monterey Jack cheese, sour cream, and diced green chiles. Mix until well combined.

Step 2

Lay out a flour tortilla on a clean surface. Spoon 1/6 of the seafood mixture down the center of the tortilla. Roll the tortilla tightly and place it seam-side down in a microwave-safe casserole dish. Repeat with the remaining tortillas.

Step 3

In a small microwave-safe bowl, combine the heavy cream and enchilada sauce. Microwave for 1 minute, then stir to form a smooth sauce.

Step 4

Pour the sauce evenly over the rolled tortillas in the casserole dish, ensuring all tortillas are coated.

Step 5

Sprinkle the remaining 1/2 cup of shredded Monterey Jack cheese over the top of the tortillas.

Step 6

Cover the casserole dish with microwave-safe plastic wrap, leaving a small vent for steam to escape.

Step 7

Microwave on high for 7-10 minutes, or until the cheese is melted and the filling is heated through. (Cooking times may vary depending on your microwave.)

Step 8

Carefully remove the casserole dish from the microwave. Let it sit for 2-3 minutes to cool slightly.

Step 9

Garnish with fresh cilantro if desired and serve immediately.
