Ingredients

  • 6 whole Roma tomatoes
  • 1 medium White onion
  • 1 whole Jalapeño pepper
  • 2 whole Garlic cloves
  • 0.5 cups Fresh cilantro
  • 2 tablespoons Fresh lime juice
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground cumin
  • 0.5 teaspoons Sugar
  • 1 cup Canned diced tomatoes (optional for more base)

Directions

Step 1

Wash and core the Roma tomatoes. Roughly chop them into quarters and set aside.

Step 2

Peel and roughly chop the white onion. Remove the seeds from the jalapeño pepper if you prefer a milder salsa, then roughly chop it.

Step 3

Peel the garlic cloves. Wash and roughly chop the fresh cilantro.

Step 4

In a food processor or blender, add the chopped tomatoes, onion, jalapeño, garlic cloves, and cilantro.

Step 5

Blend until the mixture reaches your desired texture. For a chunky salsa, pulse gently. For a smoother consistency, blend longer.

Step 6

Add the fresh lime juice, salt, ground cumin, and sugar to the blender. If you need a thicker base, add the canned diced tomatoes and blend again briefly.

Step 7

Taste the salsa and adjust seasoning if necessary, adding more lime juice, salt, or spices to taste.

Step 8

Transfer the salsa to a bowl, cover, and refrigerate for at least 30 minutes to allow the flavors to meld.

Step 9

Serve chilled with tortilla chips, or use as a topping for tacos, nachos, or grilled dishes. Store leftovers in an airtight container in the refrigerator for up to 5 days.
