Ingredients

  • 4 pieces Flour tortillas (10-inch)
  • 0.25 cup Vegetable oil
  • 1 pound Ground beef
  • 2 tablespoons Taco seasoning
  • 0.25 cup Water
  • 1 can Refried beans
  • 2 cups Shredded Mexican cheese blend
  • 1 cup Diced tomatoes
  • 0.5 cup Sliced black olives
  • 0.5 cup Chopped green onions
  • 0.5 cup Sour cream
  • 2 tablespoons Fresh cilantro (optional, for garnish)

Directions

Step 1

Heat a large skillet over medium heat and add the ground beef. Cook, breaking it apart with a wooden spoon, until browned and no longer pink, about 6-8 minutes.

Step 2

Add the taco seasoning and water to the cooked ground beef. Stir to combine and allow to simmer for 2 minutes. Remove from heat and set aside.

Step 3

In a small saucepan, warm the refried beans over low heat, stirring occasionally, until smooth and spreadable.

Step 4

Heat a large frying pan over medium-high heat and add a small amount of vegetable oil (about 1-2 teaspoons per tortilla). Lightly fry each tortilla one at a time, about 1 minute per side, until golden brown and crisp. Drain on paper towels and set aside.

Step 5

Preheat your oven to 375°F (190°C).

Step 6

Place one crispy tortilla on a baking sheet. Spread a layer of warmed refried beans evenly over its surface, followed by a layer of the seasoned ground beef.

Step 7

Sprinkle a generous handful of shredded Mexican cheese blend evenly over the beef and beans.

Step 8

Top with another crispy tortilla to form a pizza. Repeat layering process with the remaining tortillas, beans, beef, and cheese to create up to 2 pizzas.

Step 9

Bake the assembled pizzas in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly.

Step 10

Remove the pizzas from the oven and let them cool slightly, about 2 minutes.

Step 11

Top the pizzas with diced tomatoes, sliced black olives, chopped green onions, and dollops of sour cream.

Step 12

Garnish with fresh cilantro if desired. Slice into wedges and serve warm.
