Ingredients

  • 1 pound Ground beef
  • 1 medium Yellow onion, finely diced
  • 2 cloves Garlic, minced
  • 2 teaspoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Tomato sauce
  • 1.5 cups Shredded cheddar cheese
  • 6 pieces Large flour tortillas
  • 2 cups Vegetable oil (for frying)
  • 0.5 cup Sour cream
  • 0.5 cup Salsa
  • 2 tablespoons Fresh cilantro, chopped (optional)

Directions

Step 1

In a large skillet over medium heat, cook the ground beef until no longer pink, breaking it up with a wooden spoon. Drain excess grease if necessary.

Step 2

Add the diced onion and minced garlic to the skillet. Cook for 3-4 minutes until softened and fragrant.

Step 3

Stir in the chili powder, ground cumin, paprika, salt, and black pepper. Mix well to coat the beef evenly with the spices.

Step 4

Pour in the tomato sauce and stir to combine. Reduce heat to low and let the mixture simmer for 5 minutes. Remove from heat and set aside to cool slightly.

Step 5

Lay out the flour tortillas on a clean surface. Spoon 1/4 to 1/3 cup of the beef mixture onto the center of each tortilla. Sprinkle shredded cheddar cheese on top of the beef mixture.

Step 6

Fold the sides of the tortilla inward, then roll it up tightly to form a sealed burrito shape.

Step 7

Heat vegetable oil in a deep skillet or heavy-bottomed frying pan over medium-high heat until it reaches about 350°F (175°C).

Step 8

Carefully place the chimichangas seam-side down in the hot oil, 2-3 at a time, depending on the size of your pan. Fry for 2-3 minutes per side or until golden brown and crispy.

Step 9

Remove the chimichangas from the oil and place them on a plate lined with paper towels to drain excess oil.

Step 10

Serve the chimichangas warm, topped with sour cream, salsa, and a sprinkle of fresh cilantro if desired.
