Ingredients

  • 6 pieces chicken thighs (bone-in, skin-on)
  • 2 cups ripe mangoes, peeled and diced
  • 0.5 cup apricot preserves
  • 2 tablespoons soy sauce
  • 1 teaspoon fresh ginger, grated
  • 2 pieces garlic cloves, minced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped (optional for garnish)
  • 0.25 cup water

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the chicken thighs dry with a paper towel. Season them with paprika, salt, and black pepper on both sides.

Step 3

In a large oven-safe skillet, heat olive oil over medium-high heat. Place the chicken thighs skin-side down and sear for 4-5 minutes until the skin is golden and crispy. Flip the chicken and sear the other side for an additional 3-4 minutes. Transfer the chicken to a plate and set aside.

Step 4

In the same skillet, reduce the heat to medium. Add the minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.

Step 5

Stir in the diced mango, apricot preserves, soy sauce, lime juice, and water. Bring the mixture to a simmer, stirring frequently, until the sauce thickens slightly, about 5 minutes.

Step 6

Return the chicken thighs to the skillet, skin-side up, nestling them into the mango and apricot sauce.

Step 7

Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken thighs are cooked through and reach an internal temperature of 165°F (74°C).

Step 8

Carefully remove the skillet from the oven. Spoon the sauce over the chicken to glaze it. Allow the dish to rest for 5 minutes before serving.

Step 9

Garnish with chopped fresh cilantro (optional) and serve hot over rice or with a side of roasted vegetables.
