  • 200 grams brown sugar, packed
  • 50 grams granulated sugar
  • 60 milliliters molasses
  • 1 large egg
  • 300 grams all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoons ground cloves
  • 0.5 teaspoons sea salt
  • 2 tablespoons freshly grated ginger
  • 60 grams candied ginger, finely chopped
  • 50 grams granulated sugar (for coating)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar using a hand or stand mixer on medium speed until light and fluffy (about 2-3 minutes).
