Ingredients

  • 2 cups rolled oats
  • 0.5 cup honey
  • 0.5 cup peanut butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons chia seeds
  • 0.5 cup dried cranberries
  • 0.5 cup chopped nuts (almonds or walnuts)
  • 0.25 cup dark chocolate chips

Directions

Step 1

Line an 8x8 inch square baking pan with parchment paper, leaving a little overhang on the sides for easy removal.

In a medium-sized microwave-safe bowl, combine the honey and peanut butter.

Step 3

Microwave the mixture on high for about 20-30 seconds until it becomes easier to stir. Stir well until the mixture is smooth and well combined.

Stir in the vanilla extract into the honey and peanut butter mixture.

Step 5

In a large bowl, combine rolled oats, chia seeds, dried cranberries, chopped nuts, and dark chocolate chips.

Pour the wet mixture over the dry ingredients. Stir thoroughly until all ingredients are well coated with the honey and peanut butter mixture.
