  • 0.5 cup unsalted butter, melted
  • 0.25 cup honey
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 0.5 cup dried cranberries
  • 0.5 cup raisins
  • 0.5 cup chopped dried apricots
  • 0.5 cup chopped nuts (optional, such as walnuts or almonds)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.

Step 2

In a large bowl, combine rolled oats, flour, brown sugar, cinnamon, baking powder, and salt. Mix well to evenly distribute the dry ingredients.

Step 3

In a separate bowl, whisk together the melted butter, honey, egg, and vanilla extract until smooth and combined.

Step 4

Pour the wet ingredients into the dry ingredients and stir until the mixture is evenly moistened. The texture should be slightly sticky.
