Ingredients

  • 115 grams unsalted butter
  • 150 grams granulated sugar
  • 100 grams light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 130 grams all-purpose flour
  • 40 grams unsweetened cocoa powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 150 grams semi-sweet chocolate chips
  • 1 tablespoons milk (optional, if dough is too dry)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a microwave-safe bowl, melt the unsalted butter in 15-second intervals, stirring in between until fully melted. Allow it to cool slightly.

Step 3

In a large mixing bowl, whisk together the granulated sugar, light brown sugar, and melted butter until combined and creamy.

Step 4

Add the egg and vanilla extract to the sugar mixture and whisk until smooth and fully incorporated.

Step 5

In a separate medium bowl, sift together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt.

Step 6

Gradually add the dry ingredients into the wet ingredients, mixing gently with a rubber spatula or wooden spoon until just combined. Do not overmix.

Step 7

Fold in the semi-sweet chocolate chips. If the dough appears too dry, add 1 tablespoon of milk and mix until the dough comes together.

Step 8

Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 9

Bake in the preheated oven for 8–10 minutes, or until the edges are set but the centers appear slightly underbaked. Do not overbake for chewy cookies.

Step 10

Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Serve and enjoy your chewy double chocolate cookies with a glass of milk or a scoop of ice cream!
