Ingredients

  • 2 cups pitted dates, chopped
  • 0.75 cup water
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1.5 cups old-fashioned rolled oats
  • 0.75 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.75 cup unsalted butter, melted

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish or line it with parchment paper.

Step 2

In a medium saucepan, combine the chopped dates and water. Cook over medium heat, stirring often, until the dates soften and the mixture thickens into a paste, about 8-10 minutes.

Step 3

Remove the date mixture from heat and stir in the vanilla extract. Set aside to cool.

Step 4

In a large mixing bowl, whisk together the flour, oats, brown sugar, cinnamon, baking soda, and salt until well combined.

Step 5

Pour the melted butter into the dry ingredients and mix until the mixture becomes crumbly and can be pressed together.

Step 6

Press half of the oat mixture firmly into the bottom of the prepared baking dish to form a base crust.

Step 7

Spread the cooled date mixture evenly over the crust, making sure to cover the entire surface.

Step 8

Crumble the remaining oat mixture over the date layer, pressing down lightly to help it adhere.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the top is golden and set.

Step 10

Allow the bars to cool completely in the baking dish before slicing into 12 squares. Serve and enjoy!
