Ingredients

  • 1 cup Dried unsweetened apricots
  • 1 cup Unsweetened shredded coconut
  • 0.5 cup Almond flour
  • 0.25 cup Unsalted almond butter
  • 2 tablespoons Coconut oil
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving enough overhang for easy removal later.

Step 2

In a food processor, combine the dried unsweetened apricots and unsweetened shredded coconut. Pulse until the mixture is finely chopped and begins to clump together.

Step 3

Add the almond flour, almond butter, coconut oil, vanilla extract, ground cinnamon, and salt to the food processor. Blend until the mixture forms a sticky, cohesive dough.

Step 4

Transfer the dough into the prepared baking pan and press it down firmly with your hands or the back of a spatula, ensuring the layer is even and compact.

Step 5

Bake in the preheated oven for 15 minutes, or until the edges are lightly golden.

Step 6

Remove the pan from the oven and let it cool completely in the pan before transferring it to the refrigerator for about 1 hour to firm up.

Step 7

Once chilled, lift the bars out of the pan using the parchment paper overhang and place them on a cutting board.

Step 8

Cut into 12 equally sized bars and serve. Store any leftovers in an airtight container in the refrigerator for up to 1 week.
