Ingredients

  • 4 whole Roma tomatoes
  • 2 whole Jalapeño peppers
  • 1 medium Yellow onion
  • 2 whole Garlic cloves
  • 0.5 cup Cilantro, fresh
  • 2 tablespoons Lime juice, freshly squeezed
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven's broiler or set up a grill on medium-high heat.

Step 2

Place the Roma tomatoes, jalapeño peppers, yellow onion (quartered), and unpeeled garlic cloves on a baking sheet or grill pan.

Step 3

Drizzle the olive oil over the vegetables and ensure they are lightly coated.

Step 4

Broil or grill the vegetables for 10-15 minutes, turning occasionally, until they are charred and softened. The garlic should be removed earlier if it starts to brown too quickly.

Step 5

Once the vegetables are cool to handle, peel the skin off the garlic cloves and the jalapeños (optional if you prefer less heat, also de-seed the jalapeños at this stage).

Step 6

Add the roasted vegetables, cilantro, lime juice, smoked paprika, ground cumin, salt, and pepper to a blender or food processor.

Step 7

Pulse the ingredients until the salsa reaches your desired consistency (chunky or smooth). Adjust seasoning to taste.

Step 8

Transfer the salsa to a serving bowl and let it sit for 15 minutes to allow the flavors to meld.

Step 9

Serve with tortilla chips, or use as a topping for your favorite dishes. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
