Clean the chestnut mushrooms with a damp cloth and slice them thinly. Mince the garlic and finely chop the shallot.
Heat the olive oil and 25g of the butter in a large frying pan over medium heat. Once melted, add the shallots and garlic, sautéing for 2-3 minutes until softened.
Add the sliced chestnut mushrooms to the pan, along with the fresh thyme leaves. Cook for 10-12 minutes, stirring occasionally, until the mushrooms are soft and any liquid has evaporated.
Deglaze the pan by adding the cognac or brandy. Stir and allow the liquid to evaporate completely, about 2 minutes.
Transfer the cooked mushroom mixture to a food processor or blender. Add the remaining 25g of unsalted butter, double cream, fresh parsley, salt, and black pepper.

Transfer the pâté to a serving dish or ramekin. Smooth the surface and refrigerate for at least 2 hours to chill and set.
