Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.75 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 1 Large egg
  • 2 teaspoons Vanilla extract
  • 0.75 cup Fresh strawberries, finely chopped
  • 2 drops Food coloring (optional, for a pink hue)
  • 0.25 cup Powdered sugar (for garnish, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

Step 2

In a medium mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Set this mixture aside.

Step 3

In a large mixing bowl, use a hand or stand mixer to cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.

Step 4

Add the egg and vanilla extract to the butter mixture, mixing until fully incorporated.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 6

Gently fold in the finely chopped fresh strawberries. If desired, add 1-2 drops of food coloring for a pink tint.

Step 7

Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Avoid overbaking to ensure soft cookies.

Step 9

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

If desired, sift powdered sugar over the cooled cookies for a sweet garnish.
