Ingredients

  • 1.5 cups whole wheat flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 2 medium ripe bananas
  • 0.5 cup unsweetened applesauce
  • 0.25 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.25 cup milk (dairy or plant-based)
  • 0.5 cup chopped nuts or chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease with nonstick spray.

Step 2

In a medium bowl, whisk together the whole wheat flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.

Step 3

In a large mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the applesauce, honey or maple syrup, egg, vanilla extract, and milk until well combined.

Step 4

Gently fold the dry ingredients into the wet ingredients using a spatula, being careful not to overmix. The batter should be slightly lumpy but evenly combined.

Step 5

If using chopped nuts or chocolate chips, fold them into the batter at this stage.

Step 6

Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

Step 7

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Store the muffins in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. You can also freeze them for longer storage.
