Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 1 can (15 oz) Black beans (low sodium, drained and rinsed)
  • 1 can (14.5 oz) Diced tomatoes (no salt added)
  • 1 can (8 oz) Tomato sauce (no salt added)
  • 1 cup Frozen corn kernels
  • 2 tablespoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Low-sodium chicken broth
  • 0.25 cup Fresh cilantro (optional, for garnish)

Directions

Step 1

Place the chicken breasts at the bottom of the crock pot.

Step 2

Add the drained and rinsed black beans, diced tomatoes (with their liquid), tomato sauce, and frozen corn on top of the chicken.

Step 3

Sprinkle the chili powder, ground cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper evenly over the ingredients in the crock pot.

Step 4

Pour the chicken broth over the mixture to keep the chili moist and help meld the flavors together while cooking.

Step 5

Cover the crock pot with its lid and set it to cook on LOW for 6-8 hours or on HIGH for 3-4 hours.

Step 6

Once the chicken is cooked through and tender, use two forks to shred the breasts directly in the crock pot. Stir the shredded chicken into the chili to evenly distribute it.

Step 7

Taste and adjust seasonings if necessary.

Step 8

Serve hot in bowls with a sprinkle of fresh cilantro on top if desired. Enjoy this hearty dish on its own or with a side of your choice!
