  • 500 grams fresh cherries (pitted)
  • 100 grams granulated sugar
  • 2 tablespoons lemon juice
  • 150 grams all-purpose flour
  • 100 grams unsalted butter (cold, cubed)
  • 75 grams brown sugar
  • 50 grams rolled oats
  • 0.5 teaspoons cinnamon powder
  • 250 grams mascarpone cheese
  • 100 milliliters heavy cream
  • 50 grams powdered sugar
  • 1 teaspoons vanilla extract

Directions

Step 1

Preheat your oven to 180°C (350°F).

In a medium saucepan, combine the pitted cherries, granulated sugar, and lemon juice. Cook over medium heat for 8-10 minutes until the cherries release their juices and begin to soften. Set aside to cool slightly.

In a mixing bowl, combine the all-purpose flour, cold cubed butter, brown sugar, rolled oats, and cinnamon powder. Use your fingertips or a pastry cutter to mix until the mixture resembles coarse crumbs.
