Ingredients

  • 1 cup couscous
  • 1 cup water
  • 0.5 cup milk (dairy or plant-based)
  • 0.5 cup dried cherries
  • 0.25 cup walnuts
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon butter or coconut oil
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.25 cup fresh cherries (optional, for garnish)

Directions

Step 1

In a medium saucepan, bring the water, milk, and salt to a gentle boil over medium heat.

Step 2

Once the liquid begins to boil, remove the saucepan from heat and stir in the couscous. Cover the saucepan with a lid and let it sit for 5 minutes to allow the couscous to absorb the liquid.

Step 3

While the couscous rests, lightly toast the walnuts in a dry skillet over medium heat for 2-3 minutes, stirring occasionally until they are golden brown and fragrant. Remove from heat and set aside.

Step 4

After 5 minutes, remove the lid from the couscous and fluff it with a fork to separate the grains.

Step 5

Stir in the dried cherries, butter or coconut oil, honey or maple syrup, and ground cinnamon. Mix well until all ingredients are evenly combined.

Step 6

Divide the couscous mixture into serving bowls and top with toasted walnuts and fresh cherries, if desired.

Step 7

Serve warm and enjoy your Cherry Walnut Breakfast Couscous!
