Ingredients

  • 2 cups Cherry tomatoes
  • 1 cup Fresh mozzarella (ciliegine or diced)
  • 10 leaves Fresh basil leaves
  • 3 tablespoons Extra virgin olive oil
  • 1 tablespoon Balsamic vinegar
  • 1 teaspoon Honey
  • 1 clove Garlic (minced)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash the cherry tomatoes thoroughly and pat them dry. Slice each tomato in half and transfer them to a large salad bowl.

Step 2

If using ciliegine mozzarella (small mozzarella balls), leave them whole, or dice regular fresh mozzarella into bite-sized pieces. Add the mozzarella to the bowl with the tomatoes.

Step 3

Stack the basil leaves, roll them tightly into a cylinder, and slice them thinly into chiffonade strips. Sprinkle the basil over the tomatoes and mozzarella.

Step 4

In a small mixing bowl or jar with a lid, combine the olive oil, balsamic vinegar, honey, minced garlic, salt, and black pepper. Whisk or shake well until the dressing is emulsified and smooth.
