Ingredients

  • 2.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 1 cup unsalted butter, softened
  • 1.5 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • 1 cup buttermilk
  • 1.5 cups cherry pie filling
  • 8 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 3 tablespoons heavy cream

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, beat the butter and granulated sugar together using a hand or stand mixer on medium speed until light and fluffy, about 3 minutes.

Step 4

Add the vanilla extract and eggs, one at a time, beating well after each addition.

Step 5

Reduce the mixer speed to low and alternately add the dry ingredients in three parts and the buttermilk in two parts, starting and ending with the dry ingredients. Mix just until combined. Do not overmix.

Step 6

Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.

Step 7

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 8

Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Step 9

To assemble, place one cake layer on a serving plate and spread an even layer of cherry pie filling over the top, leaving about 1 inch from the edge.

Step 10

Place the second cake layer on top and gently press down to secure.

Step 11

For the frosting, beat together the cream cheese and powdered sugar in a mixing bowl until smooth. Add the heavy cream and beat on medium speed until the frosting is creamy and spreadable.

Step 12

Frost the top and sides of the cake with the cream cheese frosting, smoothing it out with a spatula or knife.

Step 13

Optionally, garnish with additional cherries or a sprinkle of powdered sugar for decoration.

Step 14

Refrigerate the cake for at least 30 minutes before serving to allow the flavors to meld. Slice and enjoy!
