Ingredients

  • 200 g dark chocolate
  • 2 tbsp coconut oil
  • 3 cups rice cereal
  • 1 cup desiccated coconut
  • 1 cup glacé cherries, finely chopped
  • 1 can sweetened condensed milk
  • 2 drops red food coloring (optional)

Directions

Step 1

Line a 12-count muffin tin with paper cupcake liners or place 12 silicone molds on a baking tray and set aside.

Step 2

Melt the dark chocolate and coconut oil in a heatproof bowl over a pot of simmering water, stirring occasionally until smooth. Alternatively, melt in the microwave in 20-second intervals, stirring in between, until fully melted.

Step 3

In a large mixing bowl, combine the rice cereal, desiccated coconut, and finely chopped glacé cherries.

Step 4

In a separate bowl, mix the sweetened condensed milk with the red food coloring (if using) to achieve a pink hue.

Step 5

Pour the sweetened condensed milk mixture into the dry ingredients and mix thoroughly using a spatula or wooden spoon until everything is evenly combined and coated.
