Ingredients

  • 4 cups Fresh or frozen cherries (pitted)
  • 3 tablespoons Granulated sugar
  • 1 tablespoon Cornstarch
  • 1 teaspoon Orange zest
  • 3 tablespoons Orange juice (freshly squeezed)
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoons Salt
  • 4 tablespoons Unsalted butter (cold, cut into small cubes)
  • 1 tablespoon Granulated sugar (for topping)
  • 0.5 cup Milk
  • 0.5 teaspoons Vanilla extract

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9-inch baking dish.

Step 2

In a medium saucepan, combine the cherries, 3 tablespoons of granulated sugar, cornstarch, orange zest, and freshly squeezed orange juice.

Step 3

Cook the mixture over medium heat, stirring constantly, until it thickens and begins to bubble, about 5–7 minutes. Remove it from heat and pour the cherry mixture evenly into the prepared baking dish.

Step 4

In a large bowl, whisk together the flour, baking powder, and salt. Using a pastry blender or your fingertips, cut the cold butter into the dry mixture until it resembles coarse crumbs.

Step 5

Add the milk and vanilla extract to the flour mixture, stirring just until a soft dough forms. Be careful not to overmix.

Step 6

Drop spoonfuls of the dough evenly over the cherry mixture in the baking dish, leaving some gaps for the filling to bubble through.

Step 7

Sprinkle the tablespoon of granulated sugar over the top of the dough for added sweetness and a light crunch.

Step 8

Bake the cobbler in the preheated oven for 30–35 minutes, or until the topping is golden brown and the cherry filling is bubbling.

Step 9

Allow the cobbler to cool slightly before serving warm. Optionally, serve with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
