Ingredients

  • 300 grams Fresh or frozen cherries (pitted)
  • 100 grams Granulated sugar
  • 250 ml Cold heavy cream
  • 1 tablespoon Gelatin powder
  • 3 tablespoons Water
  • 1 teaspoon Vanilla extract
  • 50 grams Cherries for garnish (optional)
  • 5 leaves Fresh mint leaves for garnish (optional)

Directions

Step 1

In a medium saucepan, combine the pitted cherries and 75 grams of the granulated sugar.

Step 2

Cook over medium heat for about 5 minutes, stirring occasionally, until the cherries soften and release their juices.

Step 3

Remove from heat and let the mixture cool slightly before blending it into a smooth puree using an immersion blender or food processor.

Step 4

In a small bowl, sprinkle the gelatin powder over the water and let it sit for 5 minutes to bloom.

While the gelatin blooms, gently warm the cherry puree (do not let it boil) and stir in the bloomed gelatin until completely dissolved.
