  • 120 grams unsalted butter, at room temperature
  • 100 grams granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract
  • 180 grams all-purpose flour
  • 20 grams cornstarch
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 50 grams maraschino cherries, drained and chopped
  • 30 grams powdered sugar, for dusting

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, beat the butter and granulated sugar together until light and fluffy, about 2-3 minutes.

Step 3

Add the egg yolk, vanilla extract, and almond extract to the butter mixture. Beat until well combined.

In a separate bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt.
