  • 1 teaspoon orange zest
  • 60 ml dark rum or kirsch (cherry brandy)
  • 500 ml vanilla ice cream (for serving)

Directions

Step 1

In a large skillet, melt the butter over medium heat.

Add the sugar and stir until it dissolves and begins to form a light syrup, about 1 to 2 minutes.

Step 3

Stir in the orange juice and orange zest, and bring the mixture to a gentle simmer.

Step 4

Add the pitted cherries to the skillet and cook for 4 to 5 minutes, stirring occasionally, until the cherries are softened and heated through.

Carefully pour in the dark rum or kirsch. Using a long lighter or a match, ignite the alcohol to flambé the dish. Allow the flames to subside naturally, which should take about 30 seconds to 1 minute.
