Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Unsalted butter (cold, cubed)
  • 1 tablespoon Granulated sugar
  • 0.5 teaspoon Salt
  • 6 tablespoons Ice water
  • 4 cups Pitted cherries (fresh or frozen)
  • 3 tablespoons Cornstarch
  • 0.75 cup Granulated sugar
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 1 piece Egg (beaten, for egg wash)
  • 2 teaspoons Coarse sugar (optional, for topping)

Directions

Step 1

In a large bowl, whisk together the flour, sugar, and salt.

Step 2

Add the cold, cubed butter, and use a pastry cutter or your fingers to incorporate it into the dry ingredients until the mixture resembles coarse crumbs.

Step 3

Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 4

In a medium saucepan, combine the pitted cherries, sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat, stirring frequently, until the mixture thickens and becomes bubbly, about 8-10 minutes. Remove from heat and let cool.

Step 5

Preheat the oven to 375°F (190°C). On a floured surface, roll out one dough disc into a 12-inch circle and carefully transfer it to a 9-inch pie dish.

Step 6

Trim the edges, leaving about an inch overhang. Pour the cooled cherry filling into the crust.

Step 7

Roll out the second dough disc and use a small heart-shaped cookie cutter to cut out heart shapes. Arrange the hearts decoratively over the cherry filling, or create a lattice pattern using the cutout strips.

Step 8

Crimp the edges of the pie crust and brush the top crust with beaten egg wash. Sprinkle with coarse sugar if desired.

Step 9

Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.

Step 10

Let the pie cool for at least 2 hours before serving to allow the filling to set. Slice and enjoy your Cherry Heart Pie!
