Ingredients

  • 200 grams All-purpose flour
  • 200 grams Granulated sugar
  • 50 grams Cocoa powder
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 240 milliliters Milk
  • 120 milliliters Vegetable oil
  • 2 teaspoons Vanilla extract
  • 240 milliliters Boiling water
  • 400 milliliters Heavy cream
  • 50 grams Powdered sugar
  • 300 grams Cherries (fresh or canned)
  • 150 grams Cherry preserves
  • 50 grams Dark chocolate (for shaving)

Directions

Step 1

Preheat your oven to 175°C (350°F) and grease and line two 8-inch round cake pans with parchment paper.

Step 2

In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Step 3

Add the milk, vegetable oil, and vanilla extract to the dry ingredients, and mix until well combined.

Step 4

Slowly add the boiling water to the batter, whisking continuously until smooth. The batter will be thin—this is normal.

Divide the batter evenly between the two prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.

While the cakes are cooling, prepare the whipped cream by combining the heavy cream and powdered sugar in a mixing bowl. Whip until stiff peaks form.

Pit the cherries (if fresh) and slice them in half. If using canned cherries, drain them well.

Once the cakes are cooled, level the tops with a serrated knife if needed to ensure they are even.

Frost the sides and top of the cake with the remaining whipped cream for a smooth finish.

Use a vegetable peeler to shave the dark chocolate, and sprinkle the shavings generously over the top of the cake.

Refrigerate the gateaux for at least 1 hour to allow the flavors to meld and the whipped cream to set.
