Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 2 small shallots
  • 2 medium garlic cloves
  • 1 cup low-sodium chicken broth
  • 2 tablespoons Dijon mustard
  • 1 tablespoon balsamic vinegar
  • 0.5 cup cherry preserves
  • 1 teaspoon fresh thyme leaves
  • 0.5 cup fresh cherries (pitted, optional for garnish)

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper. Lightly dredge the chicken in all-purpose flour, shaking off any excess.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for about 4-5 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.

Step 3

Reduce the heat to medium and add the butter to the skillet. Once melted, add the finely chopped shallots and sauté for 2-3 minutes until softened. Add minced garlic and cook for an additional 30 seconds until fragrant.

Step 4

Deglaze the pan with the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the Dijon mustard, balsamic vinegar, cherry preserves, and fresh thyme leaves. Mix well to create a smooth and flavorful sauce.

Step 5

Return the chicken breasts to the skillet, spooning the sauce over each piece. Lower the heat to a simmer, cover the skillet, and cook for 15 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).

Step 6

Optional: Add fresh pitted cherries during the final 5 minutes of cooking for an extra burst of freshness and texture.

Step 7

Serve the Cherry Dijon Chicken hot with the sauce spooned over the top. Pair with mashed potatoes, rice, or roasted vegetables for a complete meal.
