Ingredients

  • 350 g Fresh cherries
  • 50 g Granulated sugar
  • 2 tbsp Water
  • 240 ml Heavy whipping cream
  • 30 g Powdered sugar
  • 1 tsp Vanilla extract
  • 6 Graham crackers
  • 2 tbsp Unsalted butter

Directions

Step 1

Pit and halve the fresh cherries. Place them in a saucepan with granulated sugar and water. Cook over medium heat for 8-10 minutes, stirring occasionally, until the cherries soften and release their juices. Remove from heat and let cool completely.

Step 2

In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Be careful not to over-whip. Set aside.

Step 3

Place the graham crackers in a resealable plastic bag and crush them into fine crumbs using a rolling pin. Melt the unsalted butter and mix it with the graham cracker crumbs in a small bowl until well combined.

To assemble the parfaits, layer the graham cracker mixture, whipped cream, and cherry compote in serving glasses. Start with a layer of graham crackers, followed by whipped cream, then cherry compote.
