  • 30 milliliters lemon juice (freshly squeezed)
  • 1 piece cinnamon stick
  • 50 grams slivered almonds (optional)
  • 60 milliliters water

Directions

Step 1

1. Wash and pit the fresh cherries. Cut each cherry in half to ensure even cooking.

2. In a large, heavy-bottomed saucepan, combine the pitted cherries, granulated sugar, orange zest, orange juice, lemon juice, cinnamon stick, and water.

3. Stir the mixture well and let it sit at room temperature for 15 minutes. This helps the sugar dissolve and draws out natural juices from the cherries.

4. Heat the saucepan over medium heat and bring the mixture to a gentle boil, stirring frequently to prevent sticking.

5. Reduce the heat to low and let the mixture simmer for about 35-40 minutes. Stir occasionally and use the back of a spoon to gently mash some of the cherries for a thicker texture. If foam forms on the surface, skim it off with a spoon.
