Ingredients

  • 1 cup Fresh cherries (pitted)
  • 0.5 cup Granulated sugar
  • 0.5 cup Water
  • 0.5 teaspoon Vanilla extract
  • 1 tablespoon Lemon juice
  • 12 ounces Chilled soda water or sparkling water
  • 1 cup Ice cubes
  • 2 pieces Fresh cherries (optional, for garnish)

Directions

Step 1

In a small saucepan, combine the pitted cherries, granulated sugar, and water.

Step 2

Cook over medium heat, stirring occasionally, until the cherries have softened and burst, about 8–10 minutes.

Step 3

Use a fork or potato masher to gently mash the cherries to release their juices.

Step 4

Remove the saucepan from the heat and stir in the vanilla extract and lemon juice.

Step 5

Strain the mixture through a fine-mesh sieve into a bowl to remove the solids. Let the cherry syrup cool completely.

Step 6

To make the cherry cola, fill a glass with ice cubes.

Step 7

Pour 2–3 tablespoons of the cooled cherry syrup into the glass, depending on your desired sweetness level.

Step 8

Slowly add chilled soda water or sparkling water, stirring gently to combine.

Step 9

Garnish with fresh cherries, if desired, and serve immediately.
