Ingredients

  • 2 cups Fresh cherries
  • 1 cup Granulated sugar
  • 1 cup Cola (regular, not diet)
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Pit the cherries and place them in a medium-sized saucepan.

Step 2

Add the granulated sugar, cola, and lemon juice to the saucepan with the cherries and stir to combine.

Step 3

Set the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally to dissolve the sugar.

Step 4

Once the mixture starts boiling, lower the heat to medium-low and let it simmer for 15 minutes. Stir occasionally and use a spoon to smash the cherries slightly to release their juices.

Step 5

In a small bowl, whisk together the cornstarch and water to create a slurry.

Step 6

Slowly pour the cornstarch slurry into the saucepan while stirring continuously to avoid lumps.

Step 7

Continue to simmer the mixture for another 5 minutes until it thickens to a syrupy consistency.

Step 8

Remove the saucepan from heat and stir in the vanilla extract.

Step 9

Strain the syrup through a fine mesh sieve to remove any solids, pressing down on the cherries to extract as much liquid as possible.

Step 10

Allow the syrup to cool to room temperature, then transfer it to an airtight container or bottle and refrigerate. The syrup can be stored for up to 1 week.
