Ingredients

  • 5 cups fresh or frozen pitted cherries
  • 0.75 cups granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoons salt
  • 4 tablespoons unsalted butter (cold)
  • 0.5 cups whole milk
  • 1 tablespoon turbinado sugar (optional, for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large mixing bowl, combine the cherries, granulated sugar, cornstarch, vanilla extract, and lemon juice. Stir until the cherries are evenly coated and the mixture is well-combined.

Step 3

Pour the cherry mixture into a 9x13-inch baking dish and spread it evenly.

Step 4

In another mixing bowl, whisk together the flour, baking powder, and salt.

Step 5

Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it forms coarse crumbs.

Step 6

Add the milk to the dry mixture and gently stir until a soft dough forms. Do not overmix.

Step 7

Drop spoonfuls of the dough on top of the cherry mixture, leaving some gaps to allow steam to escape.

Step 8

If desired, sprinkle the dough topping with turbinado sugar for added crunch and sweetness.

Step 9

Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the cherry filling is bubbling.

Step 10

Remove the cobbler from the oven and let it cool for at least 10 minutes before serving.

Step 11

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
