Directions

Step 1

In a medium saucepan, combine the pitted cherries, water, and honey. Bring the mixture to a simmer over medium heat, gently mashing the cherries with the back of a spoon as they soften.

Once the cherries are softened (about 5-7 minutes), carefully strain the mixture through a fine-mesh sieve into a bowl, pressing down on the solids to extract as much juice as possible. Discard the solids and pour the cherry juice back into the saucepan.
