Ingredients

  • 2.5 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 cup Unsalted butter, softened
  • 0.75 cup Granulated sugar
  • 0.75 cup Brown sugar, packed
  • 1.5 teaspoons Vanilla extract
  • 2 Egg
  • 1.5 cups Semi-sweet chocolate chips
  • 1 cup Fresh or frozen cherries, pitted and chopped
  • 16 ounces Cream cheese, softened
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract (for cheesecake filling)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 24-cup mini muffin tin or line with paper liners.

Step 2

In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

Step 3

In a large bowl, use an electric mixer to beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.

Add the vanilla extract and eggs, one at a time, beating well after each addition.

Gradually incorporate the dry ingredients into the wet mixture, mixing just until combined. Fold in the chocolate chips and chopped cherries, being careful not to overmix.
