  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 95 grams all-purpose flour
  • 20 grams unsweetened cocoa powder
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 100 grams dried cherries, chopped

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a mini muffin tin with paper liners or lightly grease the wells.

In a heatproof bowl, melt the butter and dark chocolate together over a double boiler or in the microwave using 20-second intervals, stirring frequently until smooth. Set aside to cool slightly.

In a large mixing bowl, whisk together the granulated sugar, brown sugar, eggs, and vanilla extract until the mixture is pale and slightly thickened, about 2 minutes.
