Ingredients

  • 1 cup short-grain white rice
  • 2 cups water
  • 3 cups whole milk
  • 1 cup heavy cream
  • 0.5 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract
  • 0.25 cup unsalted almonds, sliced
  • 1 cup sweet cherries, pitted and halved
  • 0.25 teaspoon salt
  • 0 to taste ground cinnamon (optional, for topping)

Directions

Step 1

Rinse the rice thoroughly under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, bring the water to a boil. Add the rice and salt, then reduce the heat to low. Cover and simmer until the rice is tender and the water is absorbed, about 10-12 minutes.

Step 3

Once the rice has cooked, stir in the milk, heavy cream, and granulated sugar. Cook over medium heat, stirring often to prevent sticking, until the mixture begins to thicken, about 20-25 minutes.

Step 4

Reduce the heat to low and stir in the vanilla extract and almond extract. Cook for another 5 minutes, stirring continuously, until the pudding reaches a creamy consistency.

Step 5

Meanwhile, toast the sliced almonds in a dry skillet over low heat, stirring frequently, until golden brown and fragrant. Remove from heat and set aside.

Step 6

Remove the rice pudding from heat and let it cool for 5-10 minutes. The pudding will thicken slightly as it cools.

Step 7

To serve, divide the rice pudding into bowls. Top each serving with the halved cherries, toasted almonds, and a sprinkle of ground cinnamon, if desired.

Step 8

Enjoy this Cherry Almond Rice Pudding warm or chilled!
