Ingredients

  • 2 lbs pork loin
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 shallots, finely minced
  • 2 garlic cloves, minced
  • 1 cup chicken stock
  • 1 cup dried cherries
  • 2 tbsp balsamic vinegar
  • 1 tbsp brown sugar
  • 0.5 tsp almond extract
  • 0.25 cup sliced almonds, toasted
  • 2 tbsp fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the pork loin dry with paper towels and season it evenly with salt and black pepper on all sides.

Step 3

Heat olive oil in a large oven-safe skillet over medium-high heat. Add the pork loin and sear it on all sides until golden brown, about 2-3 minutes per side. Remove the pork from the skillet and set it aside.

In the same skillet, melt the butter over medium heat. Add the minced shallots and garlic, and sauté until fragrant and softened, about 2 minutes.
