Ingredients

  • 2 tablespoons Pandan extract
  • 100 grams Green pea flour
  • 500 milliliters Water
  • 10 cubes Ice cubes
  • 400 milliliters Coconut milk
  • 1 pinch Salt
  • 150 grams Palm sugar
  • 100 milliliters Water for syrup
  • 100 grams Red beans (optional)

Directions

Step 1

To make the pandan noodles, mix green pea flour, pandan extract, and 500 milliliters of water in a saucepan over medium heat. Stir continuously until it thickens and the color turns semi-clear.

Step 2

Carefully prepare a bowl filled with ice water. Using a cendol mold or a colander with large holes, press the hot pandan dough through into the ice water to form noodles. Allow them to firm up while submerged in the cold water.

Step 3

For the palm sugar syrup, combine palm sugar and 100 milliliters of water in a saucepan. Cook over medium heat until it dissolves completely and forms a syrup. Strain to remove any impurities and set aside.

Step 4

In another saucepan, heat the coconut milk gently, adding a pinch of salt. Stir gently until just warm and well combined. Do not allow the coconut milk to boil. Remove from heat and allow it to cool.

Step 5

If adding red beans, cook them until soft and set aside.

Step 6

To assemble the chendol, divide the pandan noodles into serving bowls. Layer with the optional red beans.

Step 7

Pour the cooled coconut milk over the noodles and beans, followed by a generous drizzle of palm sugar syrup.

Step 8

Top with a handful of ice cubes to chill the dessert before serving.
