Ingredients

  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 4 units garlic cloves
  • 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 5 oz fresh spinach
  • 1 cup heavy cream
  • 1 cup Parmesan cheese (grated)
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)
  • 2 tbsp fresh basil (chopped, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest. Set the pasta aside.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Mince the garlic cloves and add them to the skillet. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Add the chopped sun-dried tomatoes to the skillet. Cook for 2-3 minutes, stirring occasionally.

Step 5

Add the fresh spinach to the skillet. Stir until the spinach is wilted, about 2 minutes.

Pour in the heavy cream and bring the mixture to a gentle simmer. Stir in the grated Parmesan cheese until melted and the sauce is creamy.

Season the sauce with salt, black pepper, and red pepper flakes (if using). Taste and adjust seasoning if necessary.
