Ingredients

  • 1 cup Short-grain rice (e.g., Arborio or Jasmine)
  • 4 cups Whole milk
  • 1 cup Water
  • 0.5 cup Sugar
  • 2 teaspoons Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 1 tablespoon Unsalted butter
  • 0.5 cup Raisins (optional)

Directions

Step 1

Rinse the rice thoroughly under cold water until the water runs clear to remove excess starch.

Step 2

In a medium-sized pot, combine the rinsed rice, water, and a pinch of salt. Place over medium heat and bring to a gentle boil.

Step 3

Reduce the heat to low and simmer uncovered, stirring occasionally, until most of the water is absorbed (about 10 minutes).

Step 4

Add the milk to the pot and increase the heat to medium-low. Stir gently to combine.

Step 5

Cook the mixture uncovered, stirring frequently to prevent sticking, for about 40–45 minutes or until the rice is tender and the mixture has thickened.

Step 6

Once the desired consistency is reached, stir in the sugar, vanilla extract, ground cinnamon, and butter until fully incorporated.

Step 7

If using raisins, stir them in now and cook for an additional 5 minutes.

Step 8

Taste and adjust sweetness by adding more sugar if needed.

Step 9

Remove the pot from the heat and allow the rice pudding to cool slightly. It will continue to thicken as it cools.

Step 10

Serve warm or chilled, garnished with a sprinkle of cinnamon or a dollop of whipped cream if desired. Enjoy!
