Ingredients

  • 4 pounds Pork loin roast
  • 3 tablespoons Olive oil
  • 4 units Garlic cloves, minced
  • 2 tablespoons Fresh rosemary, chopped
  • 2 tablespoons Fresh thyme, chopped
  • 1 teaspoon Paprika
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 cup Chicken stock
  • 0.5 cup White wine (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the pork loin roast dry with paper towels and set it aside on a clean surface.

Step 3

In a small bowl, mix the olive oil, minced garlic, chopped rosemary, chopped thyme, paprika, salt, and black pepper into a paste.

Step 4

Rub the herb mixture evenly over the entire surface of the pork roast.

Step 5

Place the seasoned roast on a roasting rack inside a large baking dish.

Step 6

Pour the chicken stock and white wine (optional) into the bottom of the baking dish to keep the pork moist during cooking.

Step 7

Cover the roast loosely with aluminum foil and place it in the oven.

Step 8

Roast for 60 minutes, then remove the foil and baste the pork with the pan juices.

Step 9

Continue roasting uncovered for another 30 minutes or until the internal temperature reaches 145°F (63°C) when measured with a meat thermometer.

Step 10

Remove the roasted pork from the oven and tent it with aluminum foil. Let it rest for 10 minutes to allow the juices to redistribute.

Step 11

Slice the pork roast into 1/2-inch thick slices and serve with the pan juices drizzled on top. Enjoy!
