Ingredients

  • 1 lb large shrimp, peeled and deveined (tails on optional)
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 2 large eggs
  • 2 tbsp water
  • 1 cup panko breadcrumbs
  • 1 cup sweetened shredded coconut
  • 4 cups vegetable oil (for frying)
  • 0.5 cup sweet chili sauce (optional, for dipping)

Directions

Step 1

In a bowl, combine the all-purpose flour, salt, black pepper, and garlic powder. Mix well to form a seasoned flour mixture.

Step 2

In a separate bowl, whisk together the eggs and water to create an egg wash.

Step 3

In a third bowl, mix the panko breadcrumbs and sweetened shredded coconut.

Step 4

Hold the shrimp by the tail (or the large end if no tail) and dredge each one first in the seasoned flour, shaking off any excess.

Step 5

Dip the floured shrimp into the egg wash, ensuring it’s fully coated.

Step 6

Finally, press the shrimp into the panko-coconut mixture, making sure it’s evenly coated. Set the coated shrimp on a plate and repeat with the remaining shrimp.

Step 7

In a large, deep skillet or pot, heat the vegetable oil to 350°F (175°C). The oil should be deep enough to submerge the shrimp.

Step 8

Fry the shrimp in batches of 6-8, being careful not to overcrowd the pot. Cook for 2-3 minutes on each side, or until golden brown and crispy.

Step 9

Using a slotted spoon, remove the shrimp from the oil and place them on a paper towel-lined plate to drain excess oil.

Step 10

Serve immediately with sweet chili sauce or your favorite dipping sauce on the side.
