Ingredients

  • 1 cup All-purpose flour
  • 0.75 cup Fine yellow cornmeal
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 1 tablespoon Fresh thyme leaves
  • 0.5 cup Granulated sugar
  • 0.5 cup Vegan butter, softened
  • 3 tablespoons Unsweetened almond milk
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Turbinado sugar (optional, for sprinkling)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium-sized mixing bowl, whisk together the all-purpose flour, cornmeal, baking powder, salt, and fresh thyme leaves until well combined.

Step 3

In a large mixing bowl, cream together the vegan butter and granulated sugar using a hand mixer or a stand mixer on medium speed until light and fluffy, about 2-3 minutes.

Step 4

Add the almond milk and vanilla extract to the butter mixture, and mix until fully incorporated.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed or stirring with a spatula until a soft, slightly sticky dough forms.

Step 6

Scoop tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each ball of dough slightly with your fingers or the back of a spoon.

Step 7

If desired, sprinkle a pinch of turbinado sugar on top of each cookie for added texture and sweetness.

Step 8

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers will be soft but will firm up as they cool.

Step 9

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve the cookies at room temperature and enjoy! Store leftovers in an airtight container at room temperature for up to 5 days.
